Chicken and Corn Impossible Pie (Thermomix Recipe Included) - Mother Hubbard's Cupboard (1)

Love, love, love Impossible Pies… So quick and easy and really, you can put anything in them, you are only limited by your imagination and the size of your pie dish 🙂

This recipe is for an 8 cup pie dish, but you can halve it if you only have a 4 cup dish (generally standard). My dish was a gift for my 33rd birthday (I didn’t have a 30th so it became a 30ish birthday party) given to me as a part of a set by my good friends, Jeff, Julie and Sara! It is wonderful, as it even has a stand, so you can put it straight from the oven on to the table, make a nice big salad, dinner isready and looks gorgeous to boot!

Ingredients
500g Chicken Thighs or Breasts or Mince
1 Tin Corn Kernels
6 Green Shallots/Spring Onions
3 Cloves Garlic
6 Fresh Sage Leaves (dried is fine)
1 Tablespoon Olive Oil (20g)
200g Grated Tasty Cheese
1 Cup Self Raising Flour (150g)
2 Cups of Milk (500g)
8 Eggs
2 Teaspoons of Salt
Pepper

VEGETARIAN VERSION
If you want a vegetarian version of this substitute the chicken for 300g of cooked, chopped and drained spinach and swap out the 200g of cheese for100g of Feta and 100g of Tasty.

GLUTEN FREE VERSION
Gluten Free Self Raising Flour works just as well, but you will need to put in 1 1/2 cups instead of just 1 cup.

Method
1. Pre heat oven to 180°C and buttera large 8 cup pie dish making sure you butter it well and get into all the nooks and crannies.
2. Add finely chop shallots, garlic and roughly chopped sage leaves to a large frying pan, sauté in olive oil until transparent.
3. Add chopped chicken to mixture and fry until almost cooked remove from the heat, add corn and mix.
4. Place chicken and corn mixture into the bottom of prepared pie dish and sprinkle with cheese.

5. In another bowl whisk togethereggs, flour, milk, salt and pepper.
6. Place pie dish on a tray and fill with mixture so it is nearly full. Place the tray and push in the oven and pour the remaining mixture in. This will make sure that you don’t spill any on the way to the oven!

Fill it to the brim while it is in the oven.

7. Bake for 50 – 60 minutes for the 8 cup… 40 minutes if you have halved it.
8. Remove from the oven and allow to cool in the dish for about 15 minutes, then run a knife around the edge of the dish. Cut a big piece, serve with a nice fresh salad and eat!

I then enjoy this cold for lunch the next day with a bit of home made relish and salad. It is great to take to a picnic and also very quick and easy to make to bring to pot luck dinners and things where you need to bring something to share. Depending on how much you eat, this serves 6 – 8 people with salad or 8 – 10 if you serve it with some extra vegetables and bread.

THERMOMIX METHOD

This recipe was made in the TM31, but can be made exactly the same way on manual in the TM5.

1. Pre heat oven to 180°Cand buttera large 8 cup pie dish making sure you butter it well and get into all the nooks and crannies.
2. Place shallots, garlic and sage into the mixing bowl and chop 5 seconds/speed 7.
3. Add olive oil, roughly chopped chicken or chicken mince and sauté 10 minutes/Varoma/Reverse/speed 2.

Almost cooked… it will finish cooking in the oven.

4.Place chicken mixture into the bottom of prepared pie dish, add corn mix together then sprinkle with pre grated cheese.

5. Into the dirty mixing bowl place eggs, milk, flour, salt and pepper and mix 10 seconds/speed 5.
